- 1/2 onion diced
- 2 celery ribs diced
- 2 carrots diced
- 1/2 cup of any other vegetable you like
- 2 tbsp margarine or oil
- 8 cups broth (vegetable, chicken, beef) or water
- 1 cup pearl barley uncooked
- 1 cup pinto or white beans, pre-soaked if dry
- 1/3 cup crushed tomatoes
- 1/4 tsp salt
- 1/2 tsp pepper
- 1/4 tsp celery salt
- 1/2 tsp basil
- 1/2 tsp oregano or Italian spice mix
- 1/2 tsp thyme
- 1 tsp onion powder
- 2 large bay leaves
In a large soup pot, sauté the onions, celery, carrots and any other vegetables for 3-5 minutes in a tablespoon of olive oil. Add broth or water and all other ingredients, cover and bring to a boil, then reduce heat to low allowing to simmer for at least an hour. Stir occasionally until barley is soft and somewhat fluffy. Add more spices to taste and enjoy a bowl of this tasty soup.
Vegetable or Cabbage Soup Diet
The cabbage soup diet has been around for years. Cabbage soup made with plenty of vegetables is a low fat and high fiber diet. Make a pot of soup and when you’re hungry you eat some of the healthy soup.
It is a quick way to lose weight fast. Here’s the recipe:
- 6 large green onions
- 2 green peppers
- 1 or 2 cans of tomatoes (diced or whole)
- 3 Carrots
- 1 container of sliced Mushrooms (10 ounces)
- 1 bunch of celery
- Half a head of cabbage
- 1 or 2 cubes of bouillon
- 1 48 ounce can of V8 juice
- Season to taste with salt, pepper, parsley, curry, garlic powder, etc.
Slice green onions and saute in pan with cooking spray. Cut green pepper into bite size pieces and add to pot. Cut cabbage, carrots and mushrooms into bite size pieces and add to pot.
Add about 12 cups of water (or 8 cups and the V8 juice). Add beef or chicken bouillon cubes. Season to taste with salt and pepper. You can also add garlic or cayenne pepper for extra seasoning. Cover and put on low heat for about 2 hours.
Vegetable Soup Diet Day By Day:
Day 1: Eat fruit all day except for bananas along with the soup.
Day 2: Eat vegetables all day except for dried beans, corn and peas. You can also have one baked potato with butter. Eat soup if you’re hungry.
Day 3: Eat fruit and vegetables all day as on Day 1 and 2, but eliminate the baked potato. Enjoy some soup.
Day 4: Eat bananas (up to 8) and all the skim milk you want. Soup when you’re hungry.
Day 5 : Eat beef (up to 20 ounces) and no more than 6 tomatoes today. You can substitute chicken (no skin). Have soup and drink plenty of water.
Day 6: Eat all you want of beef and vegetables. Don’t forget to have some soup.
Day 7: This last day is for brown rice, vegetables and unsweetened fruit juice. Eat some soup.
